Most engineers think saving energy is all about finding a lower wattage. But when you’re dealing with bakery disinfection cabinets, it’s actually the opposite. The real trick isn’t how little power you use—it’s how fast you can turn it off. Here’s the thing: if you use a heavy heating element, it spends minutes soaking up energy just to get warm. Then, even after the thermostat tells it to stop, it keeps bleeding heat into the cabinet. It’s wasteful. We prefer short-wave IR lamps because they don’t mess around. They use radiation instead of convection, meaning the filament hits the right temperature almost instantly. You can flick the power on and off in seconds. This keeps your temperature window tight and stops that annoying “overshoot” where you’re paying for kilowatt-hours that aren’t actually doing any work. Let’s talk about the gear. We design these as simple drop-in replacements using high-purity quartz glass. Bakeries are messy—you’ve got steam and organic residue everywhere.
